Ingredients

  • 4 lamb shanks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 1 cup red wine
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  • Season lamb shanks with salt and pepper.
  • Heat olive oil in a large pan and brown lamb shanks on all sides. Remove and set aside.
  • In the same pan, sauté onion, carrots, celery, and garlic until softened.
  • Deglaze the pan with red wine, scraping up any browned bits.
  • Transfer the vegetables and lamb shanks to a slow cooker.
  • Add beef broth, tomato paste, thyme, and rosemary. Season with salt and pepper.
  • Cook on low for 6-8 hours or until the lamb is tender.
  • Serve the lamb shanks with the rich herbed gravy.

Notes

For a thicker gravy, you can remove the lid during the last hour of cooking to allow some liquid to evaporate.
