- 4 lamb shanks
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 1 cup red wine
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Season lamb shanks with salt and pepper.
- Heat olive oil in a large pan and brown lamb shanks on all sides. Remove and set aside.
- In the same pan, sauté onion, carrots, celery, and garlic until softened.
- Deglaze the pan with red wine, scraping up any browned bits.
- Transfer the vegetables and lamb shanks to a slow cooker.
- Add beef broth, tomato paste, thyme, and rosemary. Season with salt and pepper.
- Cook on low for 6-8 hours or until the lamb is tender.
- Serve the lamb shanks with the rich herbed gravy.
Notes
For a thicker gravy, you can remove the lid during the last hour of cooking to allow some liquid to evaporate.
