- 4 cups crispy rice cereal
- 4 tbsp butter
- 10 oz mini marshmallows
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup whipped cream
- Fresh strawberries, sliced
- Mini marshmallows
- Red food coloring
Instructions
- In a large pot, melt butter over low heat. Add mini marshmallows and stir until completely melted.
- Remove from heat and add crispy rice cereal. Stir until well combined.
- Press the mixture into a greased 9×13-inch baking dish and let it cool.
- In a mixing bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract, and mix until well combined.
- Fold in whipped cream until smooth and creamy.
- Spread the cheesecake mixture over the crispy rice layer in the baking dish.
- Chill in the refrigerator for at least 2 hours.
- Once chilled, cut the cheesecake into squares.
- To make the Santa hats, place a slice of strawberry on top of each square. Add a small amount of whipped cream on top of the strawberry, and finish with a mini marshmallow.
- Use red food coloring to draw a line around the base of the strawberry to resemble a Santa hat.
Notes
- For added flavor, you can use flavored whipped cream or add a little cinnamon to the cheesecake layer.
- Make sure to chill the cheesecake for at least 2 hours to allow it to set properly before serving.
