Description

This Sausage Ragu with Pappardelle is a rich, savory pasta dish featuring Italian sausage in a flavorful tomato-based sauce. Paired with wide, ribbon-like pappardelle pasta, it’s a comforting, hearty meal that’s perfect for any night of the week. Top it with Parmesan cheese for the ultimate finish!

Ingredients

Scale
  • 1 lb Italian sausage
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can crushed tomatoes (14.5 oz)
  • 1 cup chicken broth
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 12 oz pappardelle pasta
  • Grated Parmesan cheese, for serving

Instructions

  • In a large skillet, cook the Italian sausage over medium heat until browned and crumbled.
  • Add the diced onion and minced garlic to the skillet, sautéing until softened, about 5 minutes.
  • Stir in the crushed tomatoes, chicken broth, dried oregano, salt, and pepper. Bring the sauce to a simmer.
  • Let the sauce simmer for 20-30 minutes, stirring occasionally, until thickened to your desired consistency.
  • While the sauce is simmering, cook the pappardelle pasta according to the package instructions. Drain and set aside.
  • Toss the cooked pasta with the sausage ragu sauce, ensuring the pasta is well-coated.
  • Serve the dish topped with grated Parmesan cheese.

Notes

  • If you prefer a spicier dish, you can add a pinch of red pepper flakes to the sauce.
  • For extra richness, finish the ragu with a splash of heavy cream or a dollop of ricotta.
  • This dish pairs beautifully with a side of garlic bread or a simple green salad.
