For the Steak:
- 1 lb flank steak or sirloin steak, cut into bite-sized pieces
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary or thyme, chopped (or 1 teaspoon dried)
- Salt and pepper, to taste
For the Potatoes:
- 1 lb baby potatoes, halved or quartered
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon dried rosemary or thyme
- Salt and pepper, to taste
For the Garlic Butter:
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Cook the Steak:
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add the steak pieces and season with salt, pepper, and fresh rosemary or thyme.
- Sear the steak until browned and cooked to your desired doneness, about 4-5 minutes per side. Remove from the skillet and set aside.
- Prepare the Potatoes:
- In the same skillet, add another 2 tablespoons of olive oil.
- Toss the halved or quartered potatoes with garlic powder, paprika, dried rosemary or thyme, salt, and pepper.
- Cook the potatoes, stirring occasionally, until they are crispy and golden brown, about 15-20 minutes.
- Combine and Serve:
- Once the potatoes are cooked, push them to the side of the skillet.
- Add the cooked steak back to the skillet.
- In a small saucepan, melt the butter over low heat and add the minced garlic. Cook for 1-2 minutes until fragrant, being careful not to burn the garlic.
- Drizzle the garlic butter over the steak and potatoes.
- Garnish with fresh parsley if desired and serve warm.
Notes
For a bit of heat, add a pinch of red pepper flakes to the garlic butter. This dish pairs well with a simple side salad or steamed vegetables.
