For the Steak:

  • 1 lb flank steak or sirloin steak, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary or thyme, chopped (or 1 teaspoon dried)
  • Salt and pepper, to taste

For the Potatoes:

  • 1 lb baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried rosemary or thyme
  • Salt and pepper, to taste

For the Garlic Butter:

  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  • Cook the Steak:
    • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
    • Add the steak pieces and season with salt, pepper, and fresh rosemary or thyme.
    • Sear the steak until browned and cooked to your desired doneness, about 4-5 minutes per side. Remove from the skillet and set aside.
  • Prepare the Potatoes:
    • In the same skillet, add another 2 tablespoons of olive oil.
    • Toss the halved or quartered potatoes with garlic powder, paprika, dried rosemary or thyme, salt, and pepper.
    • Cook the potatoes, stirring occasionally, until they are crispy and golden brown, about 15-20 minutes.
  • Combine and Serve:
    • Once the potatoes are cooked, push them to the side of the skillet.
    • Add the cooked steak back to the skillet.
    • In a small saucepan, melt the butter over low heat and add the minced garlic. Cook for 1-2 minutes until fragrant, being careful not to burn the garlic.
    • Drizzle the garlic butter over the steak and potatoes.
    • Garnish with fresh parsley if desired and serve warm.

Notes

For a bit of heat, add a pinch of red pepper flakes to the garlic butter. This dish pairs well with a simple side salad or steamed vegetables.
