- 1 lb ground beef
- 1 packet taco seasoning mix
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 1 cup cherry tomatoes, halved
- 1 cup shredded lettuce
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup salsa
- 1/2 cup sliced black olives (optional)
- 1 avocado, sliced (optional)
- Tortilla chips for serving
Instructions
- Cook the ground beef in a large skillet over medium heat until browned. Drain any excess fat and stir in the taco seasoning mix according to package instructions. Set aside to cool.
- In a large serving dish or bowl, layer the following ingredients in order: beef mixture, black beans, corn, cherry tomatoes, shredded lettuce, shredded cheddar cheese.
- In a small bowl, mix together the sour cream and salsa until well combined. Spread this mixture over the cheese layer.
- Garnish with sliced black olives and avocado if desired.
- Serve immediately with tortilla chips or cover and refrigerate until ready to serve. Enjoy!
