- 1 lb shrimp (peeled and deveined)
- 2 tablespoons olive oil (divided)
- 1 yellow bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 red onion, thinly sliced
- 1 to 2 limes, cut into wedges
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the shrimp with 1 tablespoon of olive oil and the fajita seasoning until evenly coated.
- Arrange the sliced bell peppers and red onion on a baking sheet, drizzle with the remaining tablespoon of olive oil, and toss to coat.
- Place the seasoned shrimp on the baking sheet with the vegetables.
- Roast in the preheated oven for 10-12 minutes, or until the shrimp are pink and cooked through, and the vegetables are tender.
