These Sheet Pan Shrimp Fajitas are the perfect weeknight dinner – flavorful, healthy, and quick to prepare. With tender shrimp, crisp bell peppers, and red onions, all seasoned with fajita spices, this easy recipe is packed with vibrant flavors and makes for a great meal any day of the week.


Ingredients

  • 2 tablespoons fajita seasoning
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil, divided
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 red onion, thinly sliced
  • 1 to 2 limes, cut into wedges

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a bowl, toss the shrimp with 1 tablespoon of olive oil and 1 tablespoon of fajita seasoning. Set aside.
  • On a large sheet pan, toss the bell peppers and red onion with the remaining tablespoon of olive oil and 1 tablespoon of fajita seasoning. Spread evenly on the pan.
  • Arrange the seasoned shrimp on top of the vegetables in a single layer.
  • Roast in the preheated oven for 10-12 minutes, or until the shrimp are pink and cooked through.
  • Squeeze lime wedges over the fajitas before serving.
  • Serve with tortillas or on their own with a side of rice or beans.
