- 2 tablespoons fajita seasoning
- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil, divided
- 1 yellow bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 red onion, thinly sliced
- 1 to 2 limes, cut into wedges
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the shrimp with 1 tablespoon of olive oil and 1 tablespoon of fajita seasoning. Set aside.
- On a large sheet pan, toss the bell peppers and red onion with the remaining tablespoon of olive oil and 1 tablespoon of fajita seasoning. Spread evenly on the pan.
- Arrange the seasoned shrimp on top of the vegetables in a single layer.
- Roast in the preheated oven for 10-12 minutes, or until the shrimp are pink and cooked through.
- Squeeze lime wedges over the fajitas before serving.
- Serve with tortillas or on their own with a side of rice or beans.
