- 1 lb large shrimp, peeled and deveined
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 2 tbsp vegetable oil
- 1 tsp cornstarch (optional for thickening)
- Salt and pepper to taste
- Cooked rice, for serving
- Sesame seeds and green onions for garnish
Instructions
- In a small bowl, whisk together soy sauce, oyster sauce, rice vinegar, sesame oil, and cornstarch if using. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 2-3 minutes, until pink and just cooked through. Remove shrimp and set aside.
- In the same skillet, add garlic and bell peppers. Stir-fry for 3-4 minutes, until the peppers are tender-crisp.
- Return shrimp to the skillet and pour in the sauce. Stir to coat everything evenly and cook for an additional minute until heated through.
- Serve over cooked rice and garnish with sesame seeds and green onions.

For added spice, consider including sliced jalapeños or red pepper flakes.
