Ingredients
Shrimp and Noodles
- Peeled and deveined shrimp – 1 pound (about 450g)
- Rice noodles or egg noodles – 8 ounces (225g)
Vegetables & Aromatics
- Bell peppers (any color), sliced – 1 cup
- Broccoli florets – 1 cup
- Garlic, minced – 2 cloves
- Fresh ginger, minced – 1 tablespoon
- Green onions, sliced – 2 stalks
Sauces & Oils
- Soy sauce – 3 tablespoons
- Sesame oil – 2 tablespoons
Optional
- Chili flakes – 1/4 teaspoon (or to taste)
Instructions
- Prepare the Ingredients: Peel and devein the shrimp if not already done. Chop bell peppers, broccoli, and green onions. Mince the garlic and ginger. Cook noodles according to package instructions, then rinse with cold water to stop cooking.
- Cook the Shrimp: Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Season shrimp lightly with salt and pepper. Cook shrimp for about 2 minutes per side or until pink and opaque. Remove shrimp from pan and set aside.
- Sauté the Vegetables: In the same pan, add more sesame oil if needed. Add garlic and ginger, cooking until fragrant. Add broccoli and bell peppers and stir-fry for 4-5 minutes until tender-crisp.
- Combine Noodles and Sauce: Return shrimp to the skillet. Add cooked noodles and pour in soy sauce. Toss everything together to evenly coat ingredients. Cook for another 2 minutes until heated through.
- Garnish and Serve: Turn off heat and sprinkle sliced green onions and optional chili flakes on top. Serve hot for best flavor and texture.
