Description

A hearty and flavorful Filipino stew made with tender beef, vegetables, and a savory tomato-based sauce. Simple Beef Mechado is perfect for a comforting meal and pairs well with steamed rice.


Ingredients

  • 1 lb beef, cut into cubes
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 potato, peeled and diced
  • 1 carrot, peeled and sliced
  • 1 red bell pepper, sliced
  • 1 cup tomato sauce
  • 1 cup beef broth
  • 2 tbsp soy sauce
  • 2 tbsp vinegar
  • Salt and pepper, to taste

Instructions

  • In a pot, sauté the garlic and onion until fragrant.
  • Add the beef cubes and brown them on all sides.
  • Pour in the tomato sauce, beef broth, soy sauce, and vinegar. Season with salt and pepper.
  • Cover and simmer for 1-2 hours or until the beef is tender.
  • Add the potatoes, carrots, and bell pepper. Cook until the vegetables are tender.
  • Serve hot and enjoy!

Notes

  • Adjust the soy sauce and vinegar to your taste if you prefer a stronger or milder flavor.
