  • 1 pork shoulder roast
  • 1 cup orange juice
  • 1/4 cup lime juice
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 tbsp cumin
  • 1 tbsp oregano
  • Salt and pepper to taste
  • Sliced ham
  • Sliced Swiss cheese
  • Sliced pickles
  • Sandwich rolls

Instructions

  • Place the pork shoulder roast in the slow cooker.
  • In a bowl, mix together the orange juice, lime juice, lemon juice, olive oil, garlic, cumin, oregano, salt, and pepper.
  • Pour the citrus mixture over the pork shoulder.
  • Cover and cook on low for 8 hours, or until the pork is tender and shreds easily with a fork.
  • Remove the pork from the slow cooker and shred it with two forks.
  • Assemble the sandwiches: Spread the shredded pork on sandwich rolls, then layer with sliced ham, Swiss cheese, and pickles.
  • Grill the assembled sandwiches in a panini press or on a skillet until the cheese is melted and the bread is golden and toasted.
  • Serve hot and enjoy!

Notes

  • For extra flavor, add a little mustard on the rolls before assembling the sandwiches, just like traditional Cuban sandwiches.
  • You can also make the pork in advance and store it in the fridge for up to 3 days or freeze it for later use.
  • If you don’t have a panini press, you can grill the sandwiches in a hot skillet, pressing them down with a heavy pan or spatula for the same effect.
