Ingredients
Cookie Layer:

115 g unsalted butter

125 g light brown sugar

1 medium egg

1/2 tsp vanilla extract

225 g plain flour

1/2 tsp bicarbonate of soda

1 tbsp cornflour

150 g milk chocolate chips
Oreo Layer:

20–25 Oreo cookies
Brownie Layer:

100 g dark chocolate

100 g unsalted butter

2 medium eggs

140 g caster sugar

50 g plain flour

25 g cocoa powder

150 g milk chocolate chips
Instructions

Preheat oven to 180°C (350°F). Line a 9×13-inch baking tin with parchment paper.

Make the cookie layer: Cream butter and sugar until fluffy. Add egg and vanilla. Stir in flour, bicarbonate of soda, salt, and cornflour. Fold in chocolate chips. Press dough into the base of the prepared pan.

Add the Oreos: Arrange them evenly over the cookie dough.

Make the brownie layer: Melt the dark chocolate and butter together. In a separate bowl, whisk eggs and sugar until light. Combine with the melted chocolate. Fold in flour, cocoa powder, and chocolate chips. Pour over Oreos.

Bake for 35–45 minutes until a toothpick comes out with moist crumbs.
- Cool completely in the pan before slicing.
