- 1 can (14 oz) sweetened condensed milk
- 1 cup shredded coconut
- 1 tsp vanilla extract
- 1/2 cup powdered sugar
- 2 cups white chocolate chips
- 1/4 cup coconut oil
Instructions
- In a medium saucepan, combine sweetened condensed milk, shredded coconut, vanilla extract, and powdered sugar. Cook over low heat, stirring constantly, until the mixture thickens.
- Remove from heat and let it cool slightly. Roll the mixture into small balls and place them on a baking sheet lined with parchment paper. Freeze for 30 minutes.
- In a microwave-safe bowl, melt white chocolate chips and coconut oil in 30-second intervals, stirring in between until smooth.
- Dip each coconut ball into the melted chocolate, coating evenly. Place the balls back on the parchment paper and refrigerate until set.
