8 thick-cut bacon slices, divided

1 large yellow onion, sliced

2 lbs fresh green beans, trimmed

¼ cup reduced-sodium chicken broth

2½ tsp kosher salt

4 sprigs fresh thyme
Instructions

Cut 6 bacon slices into ½″ pieces and cook over medium-high in a skillet until crispy (about 8 min). Drain on paper towels, reserve drippings.

Sauté sliced onion in the bacon drippings until just tender (~3 min). Add green beans and cook, stirring, for about 2 min.

Transfer beans and onion to a 5‑quart slow cooker. Add broth, salt, pepper, thyme sprigs, and remaining 2 uncooked bacon slices.

Cover and cook on HIGH for approximately 3 hours, until beans are tender but not mushy.
- Discard thyme sprigs and cooked bacon; top with reserved crispy bacon before serving.
