Instructions

  1. Prepare the Filling: Heat a bit of oil in a hot skillet over medium-high heat. Add the diced chicken breast and cook until no longer pink, about 5-7 minutes. Add the diced red and green bell peppers, black beans, corn, and southwestern seasoning. Stir together and cook for an additional 3-4 minutes until everything is well combined and heated through. Remove from heat, stir in shredded cheese and chopped green onions, then let the mixture cool slightly.
  2. Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface in a diamond shape. Spoon 3-4 tablespoons of the cooled filling onto the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides tightly. Roll the wrapper up toward the top corner and seal the edge with a little water to keep it closed.
  3. Cook Until Crispy: Heat oil in a deep skillet or frying pan to 350°F (175°C). Fry the egg rolls in batches for 3-4 minutes per side or until golden brown and crispy. Remove and drain on paper towels. For a healthier alternative, bake the egg rolls at 400°F (200°C) for 15-20 minutes, flipping halfway through until crisp.
