Ingredients

  • 8 oz spaghetti
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  • Cook spaghetti according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add garlic and cook until fragrant.
  • Add spinach and sun-dried tomatoes to the skillet. Cook until spinach is wilted.
  • Stir in heavy cream and Parmesan cheese. Cook until sauce is heated through.
  • Add cooked spaghetti to the skillet and toss to combine. Season with salt and pepper.
