- 1 pound ground beef
- 1 cup shredded pepper jack cheese
- 1 small onion, finely chopped
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1 package empanada dough
- 1 egg, beaten for brushing
Instructions
- Preheat the oven to 400°F (200°C).
- In a pan, cook ground beef and onions over medium heat until the beef is browned. Drain any excess fat.
- Stir in chili powder and cumin, then add shredded pepper jack cheese, mixing until the cheese is melted.
- Roll out the empanada dough and cut into circles.
- Place 1-2 tablespoons of the beef mixture in the center of each dough circle, fold in half, and seal the edges with a fork.
- Brush the tops with the beaten egg and bake for 15-18 minutes, or until golden brown.
Notes
For extra flavor, consider adding diced jalapeños or a dash of hot sauce to the beef mixture.
