Description

This Spicy Cowboy Queso Dip combines savory ground beef, spicy jalapenos, and melty cheese for a crowd-pleasing dip that’s perfect for parties or game day. With a mix of cream cheese, cheddar, and a touch of chili powder, it’s guaranteed to be a hit!

Ingredients

Scale
  • 1 pound ground beef
  • 1 small onion, diced
  • 1 jalapeno, diced
  • 1 can diced tomatoes with green chilies
  • 1 can black beans, drained and rinsed
  • 1 package cream cheese (8 oz)
  • 1 cup shredded cheddar cheese
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  • Brown the beef: In a large skillet, cook the ground beef over medium heat until browned.
  • Cook the vegetables: Add the diced onion and jalapeno, and cook until softened, about 3-4 minutes.
  • Make the dip: Stir in the diced tomatoes with green chilies, black beans, cream cheese, cheddar cheese, chili powder, salt, and pepper.
  • Melt the cheese: Cook, stirring occasionally, until the cheese is melted and the dip is heated through, about 5-7 minutes.
  • Serve: Serve hot with tortilla chips for dipping.

Notes

  • You can adjust the spiciness of this dip by using more or less jalapeno, or even swapping in a milder pepper.
  • If you prefer a thicker dip, reduce the amount of diced tomatoes or add more cream cheese.
