Description

Soba Noodle Salad:

  • 1 serving soba noodles (such as Lotus Foods soba noodles)

  • 1/2 cup frozen edamame, cooked

  • 1 medium carrot, grated

  • 1 cup purple cabbage or green cabbage, thinly sliced

  • 1 medium green onion, thinly sliced on a bias

  • 1 handful cilantro, finely minced

  • 1/4 cup peanuts or cashews, roughly chopped

  • Toasted sesame seeds, for garnish

Peanut Dressing:

  • 1 tbsp peanut butter or sunflower butter

  • 1 tbsp liquid aminos or soy sauce

  • 1 tbsp lemon juice

  • 2 tsp honey or maple syrup

  • 1 tsp rice vinegar

  • 1 medium garlic clove, finely minced

  • 1 tsp fresh ginger, finely minced

  • 1/4 tsp chili flakes

  • 1 tbsp water (to thin out dressing)

  • Kosher salt, about 1/4 tsp (to taste)


Instructions

  • Cook soba noodles according to package instructions. Drain, rinse under cold water, and set aside.

  • Prepare edamame according to package directions. Drain and cool.

  • In a large bowl, combine cooked soba noodles, edamame, grated carrot, cabbage, green onion, and cilantro.

  • In a small bowl, whisk together all peanut dressing ingredients until smooth. Add water as needed to reach desired consistency.

  • Pour dressing over noodle salad and toss to coat evenly.

  • Garnish with chopped peanuts or cashews and toasted sesame seeds before serving.

Notes

  • For a vegan option, use maple syrup and sunflower butter, and soy sauce or tamari instead of liquid aminos.

  • Adjust chili flakes for your preferred spice level.

  • Can be served chilled or at room temperature.

  • Add grilled tofu or chicken for extra protein.
