Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup chopped spinach
  • 1/2 cup chopped red pepper
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  • Preheat the oven to 375°F.
  • In a bowl, mix together the spinach, red pepper, and mozzarella cheese.
  • Cut a pocket into each chicken breast.
  • Stuff each chicken breast with the spinach, red pepper, and cheese mixture.
  • Season the chicken breasts with salt and pepper.
  • In a skillet, heat the olive oil over medium heat.
  • Sear the chicken breasts for 3-4 minutes on each side.
  • Transfer the chicken breasts to a baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
