- 4 boneless, skinless chicken breasts
- 1 cup chopped spinach
- 1/2 cup chopped red pepper
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F.
- In a bowl, mix together the spinach, red pepper, and mozzarella cheese.
- Cut a pocket into each chicken breast.
- Stuff each chicken breast with the spinach, red pepper, and cheese mixture.
- Season the chicken breasts with salt and pepper.
- In a skillet, heat the olive oil over medium heat.
- Sear the chicken breasts for 3-4 minutes on each side.
- Transfer the chicken breasts to a baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
