Description

Spinach Stuffed Chicken is a healthy, savory meal with tender chicken breasts filled with a creamy spinach and cheese mixture. Baked to perfection, this dish offers a rich combination of flavors, including garlic, fresh spinach, and a variety of cheeses. It’s the perfect balance of nutrition and taste, ideal for both family dinners and special occasions. Low-carb and adaptable to different dietary needs, this dish will quickly become a favorite.

Ingredients

  • Boneless, skinless chicken breasts
  • Fresh spinach
  • Garlic
  • Cream cheese or ricotta cheese
  • Parmesan cheese
  • Mozzarella cheese
  • Olive oil
  • Salt and pepper
  • Dried herbs (such as oregano or thyme)
  • Optional: red pepper flakes for added heat

Instructions

  • Prepare the Chicken: Preheat the oven to 375°F (190°C). Cut a pocket into each chicken breast, being careful not to cut all the way through. Season with salt, pepper, and dried herbs.
  • Cook the Spinach: Heat olive oil in a skillet over medium heat. Add garlic and cook until fragrant (about 30 seconds). Add spinach and cook until wilted, 3-4 minutes. Remove from heat and let cool slightly.
  • Prepare the Filling: In a bowl, combine cooked spinach, cream cheese (or ricotta), parmesan, mozzarella, and a pinch of salt and pepper. Stir until the mixture is creamy and well combined.
  • Stuff the Chicken: Spoon the spinach mixture into the pockets of the chicken breasts. Use toothpicks to secure the opening.
  • Sear the Chicken: Heat olive oil in the same skillet over medium-high heat. Sear the chicken for 2-3 minutes per side until golden brown.
  • Bake the Chicken: Transfer the chicken breasts to a baking dish and bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
  • Serve: Remove the toothpicks and serve the spinach stuffed chicken hot, garnished with additional parmesan cheese or fresh herbs, if desired.

Notes

  • Ensure the chicken breasts are properly butterflied for even cooking and ample stuffing space.
  • If the spinach mixture is too thick, add extra cream cheese or a splash of milk to loosen it up.
  • To achieve a crispy crust, broil the chicken for the last 1-2 minutes of cooking.
  • You can use a meat thermometer to confirm the chicken reaches 165°F (75°C).
  • Marinate the chicken in olive oil, garlic, and herbs for 30 minutes for added flavor.
