This Spinach Stuffed Pastry is a delightful savory snack, perfect for brunch or as a light appetizer. With layers of puff pastry, creamy feta, savory spinach, and sun-dried tomatoes, it’s golden, flaky, and irresistible!


Ingredients

  • 1 sheet puff pastry
  • 1 cup frozen spinach, thawed and drained
  • 1/2 cup feta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped sun-dried tomatoes
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions

  • Preheat oven to 400°F (200°C).
  • Roll out puff pastry on a floured surface.
  • In a bowl, mix together spinach, feta cheese, Parmesan cheese, sun-dried tomatoes, garlic powder, salt, and pepper.
  • Spread spinach mixture over puff pastry, leaving a border around the edges.
  • Roll up the pastry tightly and seal the edges.
  • Brush the pastry with egg wash.
  • Bake for 20-25 minutes, or until golden brown.
  • Allow to cool slightly before slicing and serving.

Notes

  • You can substitute the sun-dried tomatoes with fresh tomatoes or olives for a different twist.
