  • 2 teaspoons ground cumin

For the Queso Sauce:

  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 ½ cups whole milk
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper to taste

For the Rice:

  • 1 cup long-grain white rice
  • 2 cups water or low-sodium chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt to taste

Optional Garnish:

  • Chopped fresh cilantro
  • Sliced jalapeños
  • Avocado slices
  • Lime wedges

Instructions

  • Cook the Steak:

    • Heat the olive oil in a skillet over medium-high heat. Season the steak with cumin, paprika, garlic powder, salt, and pepper.
    • Sear the steak for 4-5 minutes per side, or until cooked to your desired level of doneness.
    • Let the steak rest for a few minutes before slicing thinly against the grain.
  • Prepare the Queso Sauce:

    • In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes.
    • Pour in the milk and bring to a simmer.
    • Gradually stir in the shredded cheddar and Monterey Jack cheeses until fully melted and the sauce is smooth.
    • Season with chili powder, cumin, salt, and pepper. Stir until combined and smooth.
  • Cook the Rice:

    • In a medium saucepan, heat olive oil over medium heat. Add the rice and garlic powder, stirring to coat the rice in the oil.
    • Add water or chicken broth, bring to a boil, then reduce the heat and cover. Let it simmer for 15-20 minutes or until the rice is tender and fully cooked.
  • Assemble the Dish:

    • Place a serving of rice on each plate, top with sliced steak, and drizzle with the queso sauce.
    • Garnish with chopped cilantro, jalapeños, avocado slices, and lime wedges as desired.

Notes

  • For a spicier kick, increase the amount of chili powder or add some diced jalapeños into the queso sauce.
  • If you prefer, you can substitute the flank steak with ribeye or another cut of beef you enjoy.
