Instructions
-
Cook the Steak:
- Heat the olive oil in a skillet over medium-high heat. Season the steak with cumin, paprika, garlic powder, salt, and pepper.
- Sear the steak for 4-5 minutes per side, or until cooked to your desired level of doneness.
- Let the steak rest for a few minutes before slicing thinly against the grain.
-
Prepare the Queso Sauce:
- In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes.
- Pour in the milk and bring to a simmer.
- Gradually stir in the shredded cheddar and Monterey Jack cheeses until fully melted and the sauce is smooth.
- Season with chili powder, cumin, salt, and pepper. Stir until combined and smooth.
-
Cook the Rice:
- In a medium saucepan, heat olive oil over medium heat. Add the rice and garlic powder, stirring to coat the rice in the oil.
- Add water or chicken broth, bring to a boil, then reduce the heat and cover. Let it simmer for 15-20 minutes or until the rice is tender and fully cooked.
-
Assemble the Dish:
- Place a serving of rice on each plate, top with sliced steak, and drizzle with the queso sauce.
- Garnish with chopped cilantro, jalapeños, avocado slices, and lime wedges as desired.
Notes
- For a spicier kick, increase the amount of chili powder or add some diced jalapeños into the queso sauce.
- If you prefer, you can substitute the flank steak with ribeye or another cut of beef you enjoy.
