  • 2 tablespoons olive oil

For the Queso Rice:

  • 1 cup rice (white or brown rice)
  • 1 cup queso (cheese dip or homemade queso)
  • ½ cup chicken broth
  • 1 tablespoon lime juice (optional, for garnish)
  • Fresh cilantro, chopped (optional, for garnish)
  • Sliced jalapeños (optional, for garnish)

Instructions

  • Prepare the Steak:
    Season the steak with salt, pepper, chili powder, and cumin. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the steak and sear it for 3-4 minutes per side or until it reaches your desired doneness. Remove from the skillet, let it rest for a few minutes, and then slice it thinly against the grain.

  • Cook the Rice:
    In the same skillet, add the remaining 1 tablespoon of olive oil. Cook the rice according to package instructions. Once cooked, add chicken broth and queso to the rice, stirring until the cheese is melted and the mixture becomes creamy. Adjust the seasoning with salt and pepper as needed.

  • Combine Steak and Rice:
    Once the queso rice is ready, add the sliced steak on top of the rice or mix it in. Stir everything together until the steak is well-coated in the creamy queso sauce.

  • Garnish and Serve:
    Garnish with lime juice, fresh cilantro, and sliced jalapeños, if desired. Serve hot and enjoy!
