Description

Ingredients

1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

1 cup long-grain white rice (uncooked)

1½ cups chicken broth or water

1 cup plain Greek yogurt

⅓ cup grated cucumber (squeeze out excess water)

2 tbsp olive oil

2 garlic cloves, minced

1 tsp dried dill (or 2 tsp fresh dill, chopped)

1 tsp dried oregano

½ tsp ground cumin

Salt and black pepper, to taste

Juice of 1 lemon

½ cup crumbled feta cheese (optional)
- ¼ cup chopped fresh parsley or cilantro (for garnish)
Instructions

Heat olive oil in a large skillet or pan over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 6-8 minutes.

While the chicken is cooking, prepare the rice by bringing the chicken broth or water to a boil in a separate saucepan. Add the rice, reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.

Once the chicken is browned and cooked through, add the minced garlic to the skillet and cook for 1-2 minutes until fragrant.

Stir in the dried dill, oregano, ground cumin, salt, and pepper to season the chicken.

Add the Greek yogurt, grated cucumber, lemon juice, and half of the crumbled feta cheese (if using) to the skillet. Stir to combine and cook for an additional 3-4 minutes, allowing the flavors to meld together.

Serve the chicken and yogurt mixture over the cooked rice.
