Description

  • 1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

  • 1 cup long-grain white rice (uncooked)

  • 1½ cups chicken broth or water

  • 1 cup plain Greek yogurt

  • ⅓ cup grated cucumber (squeeze out excess water)

  • 2 tbsp olive oil

  • 2 garlic cloves, minced

  • 1 tsp dried dill (or 2 tsp fresh dill, chopped)

  • 1 tsp dried oregano

  • ½ tsp ground cumin

  • Salt and black pepper, to taste

  • Juice of 1 lemon

  • ½ cup crumbled feta cheese (optional)

  • ¼ cup chopped fresh parsley or cilantro (for garnish)

Instructions

  • Heat olive oil in a large skillet or pan over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 6-8 minutes.

  • While the chicken is cooking, prepare the rice by bringing the chicken broth or water to a boil in a separate saucepan. Add the rice, reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.

  • Once the chicken is browned and cooked through, add the minced garlic to the skillet and cook for 1-2 minutes until fragrant.

  • Stir in the dried dill, oregano, ground cumin, salt, and pepper to season the chicken.

  • Add the Greek yogurt, grated cucumber, lemon juice, and half of the crumbled feta cheese (if using) to the skillet. Stir to combine and cook for an additional 3-4 minutes, allowing the flavors to meld together.

  • Serve the chicken and yogurt mixture over the cooked rice.

  • Garnish with fresh parsley or cilantro and the remaining crumbled feta cheese (optional).

Notes

  • You can use chicken thighs instead of breasts for a juicier, more flavorful dish.

  • To make the dish spicier, add a pinch of cayenne pepper or chili flakes.
