Description

These Strawberry Cheesecake Eggroll Bites are a delicious twist on traditional cheesecake. Creamy, sweetened cream cheese and fresh strawberries are wrapped in crispy eggroll wrappers and fried to golden perfection, then topped with a sprinkle of cinnamon sugar. They’re the perfect bite-sized dessert for any occasion!


Ingredients

  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup diced strawberries
  • 12 eggroll wrappers
  • Oil, for frying
  • Cinnamon sugar, for sprinkling

Instructions

  • In a bowl, mix together cream cheese, powdered sugar, and vanilla extract until smooth.
  • Stir in diced strawberries.
  • Place a spoonful of the cream cheese mixture onto the center of an eggroll wrapper.
  • Fold the sides of the wrapper over the filling, then roll up tightly.
  • Heat oil in a pan over medium heat.
  • Fry the eggroll bites until golden brown, about 2-3 minutes per side.
  • Remove from oil and drain on paper towels.
  • Sprinkle with cinnamon sugar before serving.

Notes

  • For a richer flavor, you can add a few teaspoons of lemon zest to the cream cheese mixture.
  • If you prefer baked eggrolls, you can brush the wrappers with a little oil and bake them at 375°F (190°C) for 12-15 minutes, flipping halfway through, until golden and crispy.
