- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1 cup diced strawberries
- 12 eggroll wrappers
- Oil, for frying
- Cinnamon sugar, for sprinkling
Instructions
- In a bowl, mix together cream cheese, powdered sugar, and vanilla extract until smooth.
- Stir in diced strawberries.
- Place a spoonful of the cream cheese mixture onto the center of an eggroll wrapper.
- Fold the sides of the wrapper over the filling, then roll up tightly.
- Heat oil in a pan over medium heat.
- Fry the eggroll bites until golden brown, about 2-3 minutes per side.
- Remove from oil and drain on paper towels.
- Sprinkle with cinnamon sugar before serving.
Notes
- For a richer flavor, you can add a few teaspoons of lemon zest to the cream cheese mixture.
- If you prefer baked eggrolls, you can brush the wrappers with a little oil and bake them at 375°F (190°C) for 12-15 minutes, flipping halfway through, until golden and crispy.
