Description

Delight in these Strawberry Crumble Cheesecake Bars, where creamy cheesecake meets a fresh strawberry filling and a buttery crumble topping. Perfect for any occasion, these bars are a deliciously refreshing dessert.

  • For the Crust:
    • 1 1/2 cups graham cracker crumbs
    • 1/4 cup granulated sugar
    • 1/2 cup unsalted butter, melted
  • For the Strawberry Filling:
    • 2 cups fresh strawberries, hulled and sliced
    • 1/4 cup granulated sugar
    • 1 tbsp lemon juice
    • 1 tbsp cornstarch
  • For the Cheesecake Filling:
    • 16 oz cream cheese, softened
    • 1 cup granulated sugar
    • 1 cup sour cream
    • 1/4 cup heavy cream
    • 3 large eggs
    • 1 tsp vanilla extract
  • For the Crumble Topping:
    • 1 cup all-purpose flour
    • 1/2 cup granulated sugar
    • 1/2 tsp ground cinnamon
    • 1/4 tsp salt
    • 1/2 cup unsalted butter, cold and cut into small pieces

Instructions

  • Prepare the Crust: Preheat your oven to 325°F (163°C). In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a 9×13-inch baking dish. Bake for 8-10 minutes, then set aside to cool.
  • Make the Strawberry Filling: In a saucepan, combine sliced strawberries, granulated sugar, lemon juice, and cornstarch. Cook over medium heat, stirring frequently, until the mixture thickens. Set aside to cool completely.
  • Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy. Add the sour cream and heavy cream, mixing until combined. Beat in the eggs one at a time, followed by the vanilla extract.
  • Make the Crumble Topping: In a medium bowl, combine flour, granulated sugar, ground cinnamon, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  • Assemble & Bake: Spread the cooled strawberry filling evenly over the prepared crust. Pour the cheesecake filling over the strawberry layer. Sprinkle the crumble topping evenly over the cheesecake layer. Bake in the preheated oven for 50-60 minutes, or until the cheesecake is set and the crumble is golden brown.
  • Cool & Serve: Allow the bars to cool completely at room temperature, then refrigerate for at least 4 hours or overnight. Once chilled, slice into bars and enjoy!

Notes

These bars are best served chilled and can be stored in the refrigerator for up to a week.
