Description

This creamy strawberry mousse is light, fluffy, and bursting with fresh strawberry flavor! It’s the perfect treat for any occasion—simple to make, yet incredibly satisfying.


Ingredients

  • 8 oz cream cheese or coconut cream
  • 4 oz yogurt or additional cream cheese or coconut cream
  • 1 cup powdered sugar or sugar-free alternative
  • 5 medium-sized strawberries
  • Optional: 1/4 tsp vanilla bean paste

Instructions

  • If using cream cheese, let it come to room temperature. If using coconut cream, open the can to ensure the contents are thick and creamy (avoid any cans that are hard and flakey).
  • Remove the stems from the strawberries and blend or mash them until pureed.
  • Add the remaining ingredients (cream cheese or coconut cream, yogurt, powdered sugar, and optional vanilla bean paste) to the strawberries.
  • Blend until completely smooth using a food processor, blender, or hand mixer.
  • Transfer the mousse to serving dishes and refrigerate. The mousse will thicken considerably as it chills.

Notes

  • For a lighter version, you can substitute regular cream cheese with reduced-fat cream cheese or Greek yogurt.
  • If you prefer a sweeter mousse, feel free to adjust the amount of powdered sugar to your taste.
  • The mousse can be made a day in advance and stored in the fridge for up to 2 days.
