Description

These indulgent dark chocolate truffles are filled with rich heavy cream, dried strawberries, and a hint of vanilla. Rolled in finely chopped pistachios and strawberry powder, they offer the perfect combination of creamy, fruity, and crunchy textures.


Ingredients

  • 8 oz dark chocolate, chopped
  • 1/2 cup heavy cream
  • 1/4 cup dried strawberries, finely chopped
  • 1/4 cup pistachios, finely chopped
  • 1 teaspoon vanilla extract
  • Extra chopped pistachios and dried strawberry powder (for rolling)

Instructions

  • In a small saucepan, heat the heavy cream over medium heat until it is just simmering, but not boiling.
  • Place the chopped dark chocolate in a heatproof bowl. Pour the hot heavy cream over the chocolate and let it sit for 2-3 minutes to melt the chocolate.
  • Stir the chocolate and cream mixture until smooth and fully combined.
  • Add the finely chopped dried strawberries, chopped pistachios, and vanilla extract. Stir to combine.
  • Refrigerate the mixture for 1-2 hours, or until firm enough to scoop and roll into truffle-sized balls.
  • Roll the truffles into balls and then roll each one in extra chopped pistachios and dried strawberry powder.
  • Place the truffles on a parchment-lined tray and refrigerate until firm.
  • Serve and enjoy!

Notes

  • If you prefer a stronger strawberry flavor, you can increase the amount of dried strawberries.
