- 1 box (15.25 ounces) strawberry cake mix, plus ingredients to prepare (eggs, oil, water)
- 1 cup shredded coconut
- 1/2 cup chopped pecans
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup strawberry jam or preserves
- For the Frosting:
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
- For Garnish:
- Fresh strawberries (optional)
Instructions
- Preheat oven to temperature specified on the cake mix box. Grease and flour a 9×13 inch baking pan.
- Prepare the strawberry cake batter according to package instructions.
- Spread shredded coconut, chopped pecans, and chocolate chips evenly in the bottom of the prepared pan.
- Pour the cake batter over the top, spreading it evenly.
- Drop spoonfuls of strawberry jam or preserves evenly over the batter.
- In a separate bowl, beat cream cheese and butter until smooth and creamy.
- Gradually beat in powdered sugar and vanilla extract until the frosting is smooth.
- Drop spoonfuls of frosting over the top of the cake batter and swirl gently with a knife or spatula to create a marbled effect.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the cake completely in the pan on a wire rack.
