Description

This delightful Strawberry Seismic Cake features a burst of flavors with strawberry cake, shredded coconut, pecans, and a creamy frosting swirled throughout. Perfect for any occasion!


Ingredients

  • For the Cake:
    • 1 box (15.25 ounces) strawberry cake mix, plus ingredients to prepare (eggs, oil, water)
    • 1 cup shredded coconut
    • 1/2 cup chopped pecans
    • 1/2 cup semi-sweet chocolate chips
    • 1/2 cup strawberry jam or preserves
  • For the Frosting:
    • 8 ounces cream cheese, softened
    • 1/2 cup unsalted butter, softened
    • 3 cups powdered sugar
    • 1 teaspoon vanilla extract
  • For Garnish:
    • Fresh strawberries (optional)

Instructions

  • Preheat oven to temperature specified on the cake mix box. Grease and flour a 9×13 inch baking pan.
  • Prepare the strawberry cake batter according to package instructions.
  • Spread shredded coconut, chopped pecans, and chocolate chips evenly in the bottom of the prepared pan.
  • Pour the cake batter over the top, spreading it evenly.
  • Drop spoonfuls of strawberry jam or preserves evenly over the batter.
  • In a separate bowl, beat cream cheese and butter until smooth and creamy.
  • Gradually beat in powdered sugar and vanilla extract until the frosting is smooth.
  • Drop spoonfuls of frosting over the top of the cake batter and swirl gently with a knife or spatula to create a marbled effect.
  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool the cake completely in the pan on a wire rack.
  • Garnish with fresh strawberries if desired, slice, and serve this delicious Strawberry Seismic Cake!
