The Strawberry Seismic Cake is a delightful and refreshing dessert, perfect for summer gatherings or any special occasion. This poke cake combines a moist strawberry base with creamy vanilla pudding and fresh strawberries, all topped with a light layer of whipped topping. It’s a simple yet show-stopping dessert that will leave your guests impressed!

  • 1 box strawberry cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1 box instant vanilla pudding mix
  • 2 cups cold milk
  • 1/2 cup strawberry jam
  • 1 cup fresh strawberries, sliced
  • 1 tub whipped topping

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • In a large bowl, combine the strawberry cake mix, eggs, vegetable oil, and water. Mix until smooth.
  • Pour the batter into the prepared dish and bake according to the package instructions, or until a toothpick inserted in the center comes out clean.
  • While the cake is baking, whisk the instant vanilla pudding mix with cold milk until it thickens.
  • After baking, let the cake cool for about 10 minutes. Poke holes all over the cake using the end of a wooden spoon.
  • Pour the vanilla pudding over the cake, making sure it seeps into the holes.
  • Spread the strawberry jam evenly over the pudding layer.
  • Top with sliced fresh strawberries.
  • Spread the whipped topping evenly over the entire cake.
  • Refrigerate for at least 2 hours before serving.

Notes

  • For an extra strawberry flavor, you can replace the water in the cake mix with strawberry-flavored soda.
  • Make sure the cake is fully cooled before adding the pudding to avoid it becoming too soft.
  • Garnish with additional fresh strawberries or mint leaves for an added touch.
