Description

This delightful Strawberry Velvet Cake features fresh strawberries in a moist cake, topped with creamy vanilla bean frosting for a perfect dessert.

For the Cake:

  • 2 cups cake flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup buttermilk, room temperature
  • 1/4 cup vegetable oil
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup finely chopped fresh strawberries

For the Vanilla Bean Frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons heavy cream
  • Seeds scraped from 1 vanilla bean pod
  • 1 teaspoon vanilla extract
  • Fresh strawberries, for garnish

Instructions

  • Preheat the Oven:
    • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • Prepare the Cake:
    • In a large bowl, sift together the cake flour, sugar, baking powder, baking soda, and salt.
    • Add the softened butter and mix until the mixture resembles coarse crumbs.
    • In another bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract.
    • Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
    • Fold in the chopped strawberries gently.
    • Divide the batter evenly between the prepared cake pans.
    • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    • Cool cakes in the pans for 10 minutes, then remove from pans and cool completely on wire racks.
  • Make the Vanilla Bean Frosting:
    • In a large bowl, beat the softened butter until creamy.
    • Gradually add powdered sugar, one cup at a time, beating well after each addition.
    • Beat in the heavy cream, vanilla bean seeds, and vanilla extract until smooth and fluffy.
  • Assemble the Cake:
    • Place one cake layer on a serving plate. Spread a layer of frosting over the top.
    • Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
    • Garnish with fresh strawberries.
