Instructions
- Preheat the Oven:
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Prepare the Cake:
- In a large bowl, sift together the cake flour, sugar, baking powder, baking soda, and salt.
- Add the softened butter and mix until the mixture resembles coarse crumbs.
- In another bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
- Fold in the chopped strawberries gently.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool cakes in the pans for 10 minutes, then remove from pans and cool completely on wire racks.
- Make the Vanilla Bean Frosting:
- In a large bowl, beat the softened butter until creamy.
- Gradually add powdered sugar, one cup at a time, beating well after each addition.
- Beat in the heavy cream, vanilla bean seeds, and vanilla extract until smooth and fluffy.
- Assemble the Cake:
- Place one cake layer on a serving plate. Spread a layer of frosting over the top.
- Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
