For the Cake:
- 2 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup whole milk
- 1 cup pureed fresh strawberries
- 2 tablespoons strawberry jam or preserves
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup vegetable oil
For the Strawberry Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1/2 cup pureed fresh strawberries
- 1 teaspoon vanilla extract
For Decoration:
- Fresh strawberries, sliced
- Mint leaves (optional)
Instructions
- Prepare the Cake:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the butter and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, then add the vanilla extract and mix well.
- Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture.
- Fold in the pureed strawberries and strawberry jam until just combined. Stir in the vegetable oil.
- Divide the batter evenly between the prepared cake pans and smooth the tops.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Make the Frosting:
- In a large bowl, beat the softened cream cheese and butter together until smooth and creamy.
- Gradually add the powdered sugar, beating until fully combined and smooth.
- Mix in the pureed strawberries and vanilla extract until well incorporated.
- Assemble the Cake:
- Place one cake layer on a serving plate or cake stand. Spread a layer of strawberry cream cheese frosting on top.
- Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
- Decorate with fresh strawberry slices and mint leaves if desired.
Notes
For best results, use ripe strawberries for both the cake and frosting. The cake can be made ahead and stored at room temperature for up to 2 days or refrigerated for up to 5 days.
