- 1 lb ground beef
- 1 medium onion, chopped
- 2 bell peppers, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 cup cooked rice
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, cook ground beef and onion over medium heat until beef is browned. Drain excess fat.
- Add bell peppers, diced tomatoes, tomato sauce, cooked rice, garlic powder, salt, and black pepper to the skillet. Stir to combine.
- Transfer mixture to a casserole dish and sprinkle shredded cheddar cheese on top.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is melted and bubbly.
- Serve hot and enjoy!
Notes
- You can add cooked quinoa or cauliflower rice for a healthier alternative to regular rice.
- For added flavor, sprinkle some crushed red pepper flakes on top before baking.
