This easy and hearty stuffed pepper casserole combines ground beef, bell peppers, rice, and a savory tomato sauce, all topped with melted cheddar cheese. It’s a comforting, one-pan meal that’s perfect for busy weeknights.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 bell peppers, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup cooked rice
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large skillet, cook ground beef and onion over medium heat until beef is browned. Drain excess fat.
  • Add bell peppers, diced tomatoes, tomato sauce, cooked rice, garlic powder, salt, and black pepper to the skillet. Stir to combine.
  • Transfer mixture to a casserole dish and sprinkle shredded cheddar cheese on top.
  • Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is melted and bubbly.
  • Serve hot and enjoy!

Notes

  • You can add cooked quinoa or cauliflower rice for a healthier alternative to regular rice.
  • For added flavor, sprinkle some crushed red pepper flakes on top before baking.
  • Leftovers can be stored in the refrigerator for up to 3 days.
