Description

This hearty and flavorful casserole combines ground beef, colorful bell peppers, and cheesy goodness, all baked together for a comforting meal that’s easy to prepare.


Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat oven to 350°F.
  • In a large skillet, cook ground beef over medium heat until no longer pink. Drain excess fat.
  • Add chopped onion and bell peppers to the skillet and cook until vegetables are tender.
  • Stir in diced tomatoes, tomato sauce, garlic powder, salt, and black pepper. Let simmer for 5 minutes.
  • Stir in cooked rice and half of the shredded cheddar cheese.
  • Transfer the mixture to a baking dish and sprinkle the remaining cheddar cheese on top.
  • Bake in preheated oven for 25-30 minutes, or until cheese is melted and bubbly.
  • Serve hot and enjoy!

Notes

For added flavor, consider mixing in some Italian seasoning or crushed red pepper flakes. You can also substitute ground turkey for a lighter option.
