- 1 lb ground beef
- 1 small onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup cooked rice
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 350°F.
- In a large skillet, cook ground beef over medium heat until no longer pink. Drain excess fat.
- Add chopped onion and bell peppers to the skillet and cook until vegetables are tender.
- Stir in diced tomatoes, tomato sauce, garlic powder, salt, and black pepper. Let simmer for 5 minutes.
- Stir in cooked rice and half of the shredded cheddar cheese.
- Transfer the mixture to a baking dish and sprinkle the remaining cheddar cheese on top.
- Bake in preheated oven for 25-30 minutes, or until cheese is melted and bubbly.
- Serve hot and enjoy!
Notes
For added flavor, consider mixing in some Italian seasoning or crushed red pepper flakes. You can also substitute ground turkey for a lighter option.
