Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion, sliced carrots, and minced garlic to the pot. Cook, stirring occasionally, until the vegetables are softened and fragrant, about 5-7 minutes.
- Season the chicken pieces with salt, pepper, and paprika. Add the chicken pieces to the pot, browning them on all sides (about 5-7 minutes).
- Once the chicken is browned, pour in the diced tomatoes (with juices) and chicken broth. Stir to combine.
- Cover the pot and reduce the heat to low. Simmer the stew for 45 minutes, stirring occasionally, until the chicken is tender and cooked through.
