  • 1 whole chicken, cut into pieces (or you can use bone-in, skinless chicken pieces)
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 1 cup chicken broth
  • Salt and pepper, to taste
  • 1 teaspoon paprika
  • 1 tablespoon olive oil

Instructions

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion, sliced carrots, and minced garlic to the pot. Cook, stirring occasionally, until the vegetables are softened and fragrant, about 5-7 minutes.
  • Season the chicken pieces with salt, pepper, and paprika. Add the chicken pieces to the pot, browning them on all sides (about 5-7 minutes).
  • Once the chicken is browned, pour in the diced tomatoes (with juices) and chicken broth. Stir to combine.
  • Cover the pot and reduce the heat to low. Simmer the stew for 45 minutes, stirring occasionally, until the chicken is tender and cooked through.
  • Taste and adjust the seasoning with more salt or pepper, if needed. Serve the succulent stewed chicken hot, alongside your favorite side dishes.

Notes

  • For added flavor, you can use bone-in chicken pieces such as thighs or drumsticks.
  • If you prefer a thicker stew, you can uncover the pot during the last 10 minutes of cooking to allow some of the liquid to evaporate.
