Ingredients

2 pounds boneless skinless chicken breasts, cut into bite-sized pieces

2 tablespoons low sodium tamari or soy sauce

2 tablespoons chili garlic sauce

2 tablespoons rice vinegar or apple cider vinegar

3 tablespoons honey

1 lime, juiced (about 2 tablespoons)

¾ teaspoon smoked paprika

½ teaspoon kosher salt

1 small pineapple, cut into approx. 1-inch cubes
Instructions

In a large bowl, whisk together olive oil, tamari (or soy sauce), chili garlic sauce, rice vinegar, honey, lime juice, smoked paprika, and salt to create the marinade.

Add chicken pieces to the marinade, tossing to coat thoroughly. Cover and refrigerate for at least 30 minutes, preferably 1–2 hours.

Preheat grill to medium-high heat. Thread chicken pieces and pineapple cubes alternately onto skewers.

Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and pineapple is caramelized.
- Remove from grill and let rest for a few minutes before serving.
