Description

These Sweet and Spicy Grilled Chicken and Pineapple Skewers combine tender, juicy chicken with caramelized pineapple chunks, all coated in a vibrant marinade bursting with honey, chili garlic, and tangy lime. Perfect for summer barbecues or a flavorful weeknight dinner!

  • 2 pounds boneless skinless chicken breasts, cut into bite-sized pieces

  • 2 tablespoons olive oil

  • 2 tablespoons low sodium tamari or soy sauce

  • 2 tablespoons chili garlic sauce

  • 2 tablespoons rice vinegar or apple cider vinegar

  • 3 tablespoons honey

  • 1 lime, juiced (about 2 tablespoons)

  • ¾ teaspoon smoked paprika

  • ½ teaspoon kosher salt

  • 1 small pineapple, cut into approx. 1-inch cubes


Instructions

  • In a large bowl, whisk together olive oil, tamari (or soy sauce), chili garlic sauce, rice vinegar, honey, lime juice, smoked paprika, and salt to create the marinade.

  • Add chicken pieces to the marinade, tossing to coat thoroughly. Cover and refrigerate for at least 30 minutes, preferably 1–2 hours.

  • Preheat grill to medium-high heat. Thread chicken pieces and pineapple cubes alternately onto skewers.

  • Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and pineapple is caramelized.

  • Remove from grill and let rest for a few minutes before serving.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.

  • Adjust the amount of chili garlic sauce to control the heat level.

  • Serve with rice, salad, or grilled veggies for a complete meal.

  • Can be cooked under a broiler or on a grill pan if an outdoor grill isn’t available.
