- 1 cup pineapple juice
- 1/4 cup brown sugar, firmly packed
- 1/3 cup low sodium soy sauce
- 1 medium can pineapple chunks (optional)
- 1 small onion, chopped (optional; Vidalia or your choice)
- 1 green pepper, cut into chunks (optional)
Instructions
- Prepare the Ingredients: If not pre-cut, cut the chicken into chunks. Chop the onion and cut the green pepper into chunks if using.
- Combine Ingredients: In a slow cooker/crock pot, combine the chicken chunks, pineapple juice, brown sugar, and soy sauce. If using, add pineapple chunks, onion, and green pepper.
- Cook: Cover and cook on low for 6-8 hours, or until the chicken is tender and cooked through.
- Serve: Once cooked, serve the chicken with rice or noodles. Use the sauce as a glaze or additional topping.

- Adjust the sweetness by adding more or less brown sugar to taste.
