For the Beef:

  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 2 tablespoons smoked paprika
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper, to taste

For the Sweet Heat Glaze:

  • 1/2 cup barbecue sauce (your favorite brand)
  • 1/4 cup honey
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon hot sauce (adjust to taste)
  • 1/2 teaspoon crushed red pepper flakes (optional, for extra heat)

Instructions

  • Prepare the Beef:
    Preheat your oven to 300°F (150°C). In a large bowl, combine brown sugar, smoked paprika, chili powder, garlic powder, onion powder, cayenne pepper, salt, and pepper. Toss the beef cubes in olive oil, then coat thoroughly with the spice mixture.
  • Cook the Beef:
    Spread the coated beef cubes on a baking sheet lined with parchment paper or a roasting pan. Roast in the preheated oven for 2.5 to 3 hours, or until the beef is tender and caramelized, stirring halfway through cooking.
  • Prepare the Sweet Heat Glaze:
    While the beef is cooking, combine barbecue sauce, honey, apple cider vinegar, hot sauce, and crushed red pepper flakes (if using) in a small saucepan. Bring to a simmer over medium heat, stirring occasionally, until the glaze is slightly thickened, about 5-7 minutes. Remove from heat and set aside.
  • Glaze the Beef:
    Once the beef is cooked and tender, remove it from the oven. Toss the beef cubes in the sweet heat glaze, ensuring they are evenly coated. Return the glazed beef to the oven and bake for an additional 15-20 minutes, until the glaze is sticky and caramelized.
  • Serve:
    Serve the sweet heat poor man’s burnt ends hot, with extra barbecue sauce on the side if desired. These are perfect as a main dish or served as a hearty appetizer.

Notes

For best results, allow the burnt ends to rest for a few minutes before serving. Adjust the level of sweetness and heat in the glaze to suit your taste preferences.
