Description

A fun twist on tacos, these Taco Cupcakes feature seasoned beef and melted cheese baked in a crescent roll shell, topped with fresh salsa, sour cream, and crisp lettuce.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (8 oz) refrigerated crescent roll dough
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1/4 cup sour cream
  • 1/4 cup chopped lettuce
  • 1/4 cup diced tomatoes

Instructions

  • Preheat oven to 375°F (190°C).
  • In a skillet, brown the ground beef over medium heat and stir in the taco seasoning, cooking until heated through.
  • Roll out the crescent roll dough and cut it into squares. Press each square into the cups of a greased muffin tin.
  • Fill each cup with the seasoned beef and top with shredded cheddar cheese.
  • Bake for 10-12 minutes, or until the dough is golden brown and the cheese is melted.
  • Remove from the oven and top each cupcake with salsa, sour cream, chopped lettuce, and diced tomatoes before serving.

Notes

For added flavor, consider adding diced jalapeños or black olives as toppings.
