Ingredients

  • 1 cup long-grain white rice
  • 1 pound ground beef or ground turkey
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1 cup cooked black beans (optional)
  • 1 cup chopped lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives (optional)
  • Sour cream and chopped cilantro for garnish (optional)

Instructions

  • Cook Rice:
    Cook the rice according to package instructions. Set aside.
  • Prepare Taco Meat:
    In a large skillet, cook the ground beef or turkey over medium heat until fully browned, breaking it up with a spoon as it cooks.
    Drain excess fat if necessary. Add the taco seasoning mix and water to the skillet. Stir well and simmer for 5 minutes, or until the mixture thickens and is well combined.
  • Combine Ingredients:
    In a large bowl, combine the cooked rice and taco meat mixture. Stir until the rice is well coated with the meat and seasoning.
  • Add Cheese and Salsa:
    Stir in the shredded cheddar cheese and salsa, mixing until the cheese is melted and everything is heated through.
  • Serve:
    Divide the Taco Rice among serving plates. Top with chopped lettuce, diced tomatoes, black olives, and any additional toppings you like.
    Garnish with a dollop of sour cream and a sprinkle of chopped cilantro if desired.
  • Enjoy:

Notes

You can customize Taco Rice with additional toppings like guacamole, jalapeños, or shredded Monterey Jack cheese for extra flavor!
