- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup green onions, chopped
- 1/4 cup cilantro, chopped
- 1 egg
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup peanuts, crushed
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1/2 tsp red pepper flakes
- 1/2 cup chicken broth
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, mix together ground chicken, breadcrumbs, green onions, cilantro, egg, garlic, ginger, salt, and black pepper. Form into meatballs and place on a baking sheet.
- Bake meatballs in the preheated oven for 20-25 minutes, or until cooked through.
- In a saucepan, combine peanuts, peanut butter, soy sauce, honey, rice vinegar, red pepper flakes, and chicken broth. Cook over medium heat until heated through and well combined.
- Serve meatballs with peanut sauce drizzled on top.
Notes
For extra crunch, sprinkle more crushed peanuts on top before serving.
