Description

These flavorful Thai chicken meatballs are perfectly seasoned and baked to perfection, then drizzled with a creamy and slightly spicy peanut sauce. A delicious and satisfying dish that brings a taste of Thailand to your table!


Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup green onions, chopped
  • 1/4 cup cilantro, chopped
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup peanuts, crushed
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1/2 tsp red pepper flakes
  • 1/2 cup chicken broth

Instructions

  • Preheat oven to 400°F (200°C).
  • In a large bowl, mix together ground chicken, breadcrumbs, green onions, cilantro, egg, garlic, ginger, salt, and black pepper. Form into meatballs and place on a baking sheet.
  • Bake meatballs in the preheated oven for 20-25 minutes, or until cooked through.
  • In a saucepan, combine peanuts, peanut butter, soy sauce, honey, rice vinegar, red pepper flakes, and chicken broth. Cook over medium heat until heated through and well combined.
  • Serve meatballs with peanut sauce drizzled on top.

Notes

For extra crunch, sprinkle more crushed peanuts on top before serving.
