  • 1 package of dumplings
  • 1 can of coconut milk
  • 2 cups of chicken or vegetable broth
  • 1 red bell pepper, sliced
  • 1 onion, diced
  • 2 tablespoons of red curry paste
  • 1 tablespoon of fish sauce
  • 1 tablespoon of brown sugar
  • 1 tablespoon of lime juice
  • Fresh cilantro for garnish

Instructions

  • In a large pot, combine coconut milk and broth. Bring to a simmer.
  • Add red curry paste, fish sauce, and brown sugar. Stir until well combined.
  • Add onion and bell pepper. Cook for 5 minutes.
  • Add dumplings and cook according to package instructions.
  • Stir in lime juice.
