- 1 package of dumplings
- 1 can of coconut milk
- 2 cups of chicken or vegetable broth
- 1 red bell pepper, sliced
- 1 onion, diced
- 2 tablespoons of red curry paste
- 1 tablespoon of fish sauce
- 1 tablespoon of brown sugar
- 1 tablespoon of lime juice
- Fresh cilantro for garnish
Instructions
- In a large pot, combine coconut milk and broth. Bring to a simmer.
- Add red curry paste, fish sauce, and brown sugar. Stir until well combined.
- Add onion and bell pepper. Cook for 5 minutes.
- Add dumplings and cook according to package instructions.
- Stir in lime juice.
