Description

Perfectly crunchy with a sweet surprise, these cowboy cookies combine oats, chocolate chips, and nuts for an irresistible treat!


Ingredients

  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup old-fashioned oats
  • 1 cup chocolate chips
  • 1 cup chopped walnuts or pecans
  • 1/2 cup shredded coconut (optional)

Instructions

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • In a large bowl, cream the butter, granulated sugar, and brown sugar together until light and fluffy. Beat in the eggs, one at a time, then mix in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  • Stir in the oats, chocolate chips, walnuts or pecans, and shredded coconut (if using) until evenly distributed.
  • Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are golden brown but the centers are still soft. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For an extra boost of flavor, add a pinch of cinnamon or a drizzle of caramel over the cooled cookies. These cowboy cookies are perfect for snacking or sharing with friends and family!
