This hearty and comforting lasagna soup combines all the delicious flavors of traditional lasagna in a cozy, easy-to-make soup. It’s perfect for chilly evenings and will warm you right up!

- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 4 cups beef broth
- 1 tsp Italian seasoning
- 1/4 tsp red pepper flakes
- 8 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1/2 cup mozzarella cheese, shredded
- Fresh basil for garnish
Instructions
- In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the diced onion and minced garlic, cooking until softened, about 5 minutes.
- Stir in the diced tomatoes, tomato sauce, beef broth, Italian seasoning, and red pepper flakes. Bring the mixture to a boil.
- Reduce the heat and add the broken lasagna noodles. Simmer for 15-20 minutes, or until the noodles are tender.
- In a small bowl, mix together the ricotta and mozzarella cheeses until well combined.
- Serve the soup topped with a spoonful of the cheese mixture and garnish with fresh basil.
Notes
For a bit of extra flavor, consider adding chopped spinach or kale to the soup while it’s simmering. You can also substitute ground turkey or sausage for the beef.
