A creamy and vibrant pasta dish featuring fresh tomatoes, spinach, and ricotta cheese, bursting with the flavors of basil—perfect for a quick weeknight dinner.


Ingredients

  • 12 oz pasta (penne or your choice)
  • 1/2 cup ricotta cheese
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  • Cook pasta according to package instructions and drain.
  • In a skillet, heat olive oil and sauté garlic until fragrant. Add tomatoes and spinach, cooking until spinach wilts.
  • Stir in ricotta cheese, basil, salt, and pepper. Add the cooked pasta and toss until well combined.
  • Serve hot with extra basil for garnish.

Notes

For added flavor, consider sprinkling with Parmesan cheese before serving.
