  • 6 large eggs
  • 1/2 cup milk
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1/2 cup diced bell peppers (any color)
  • 1/4 cup diced onion
  • 1/2 cup diced tomatoes
  • Optional: 1/2 cup cooked bacon or sausage, crumbled
  • Salt and black pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions

  • Preheat the oven: Set the oven to 375°F (190°C). Lightly grease a round baking dish or pie pan.
  • Layer the tortillas: Line the baking dish with the tortillas, overlapping them slightly to create a crust. Press them gently to fit the shape of the pan.
  • Prepare the filling: In a bowl, whisk together the eggs, milk, salt, and pepper. Stir in the diced bell peppers, onion, tomatoes, and any optional cooked bacon or sausage.
  • Assemble the quiche: Sprinkle half of the shredded cheese over the tortilla base. Pour the egg mixture over the cheese, then top with the remaining cheese.

Notes
