Description

Tender beef tips simmered in a rich sauce served over egg noodles, this hearty dish is a crowd-pleaser for family dinners or meal prep!


Ingredients

  • 1 1/2 pounds beef stew meat, cut into bite-sized pieces
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup red wine (optional)
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 tablespoons soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups egg noodles
  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)
  • Fresh parsley, chopped for garnish

Instructions

  • Prepare the Beef Mixture:
    • In a large bowl, combine the beef stew meat, chopped onion, minced garlic, beef broth, red wine (if using), cream of mushroom soup, soy sauce, dried thyme, dried rosemary, salt, and pepper. Mix well.
  • Transfer to Crockpot:
    • Pour the mixture into a crockpot and cover. Cook on low for 6-8 hours, or until the beef is tender.
  • Cook the Noodles:
    • About 30 minutes before serving, cook the egg noodles according to package instructions. Drain and set aside.
  • Thicken the Sauce (Optional):
    • If you prefer a thicker sauce, mix the cornstarch with water in a small bowl to create a slurry. Stir this into the beef mixture and cook on high for 15-20 minutes, or until the sauce has thickened.
  • Combine and Serve:
    • Stir in the cooked egg noodles and garnish with fresh parsley before serving.

Notes

  • You can adjust the seasoning and herbs based on your preference.
  • Leftovers can be stored in the refrigerator and reheated easily.
