With simple ingredients and a short prep time, this casserole is a delicious and easy meal everyone will love.

Ingredients

Scale
  • 4 1/2 cups chopped cooked chicken
  • 4 ounces cream cheese (room temperature)
  • 1 cup cottage cheese
  • 1/2 cup sour cream
  • 1 (10.5 ounce) can unsalted Cream of Chicken Soup
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried onion powder
  • 1 sleeve Ritz crackers (crushed)
  • 5 tablespoons butter (melted)

Instructions

  • Preheat the oven to 350°F (175°C). Lightly spray a 9×9 inch baking dish with cooking spray and set aside.

  • Combine the ingredients: In a large mixing bowl, combine the chopped cooked chicken, cream cheese, cottage cheese, sour cream, garlic powder, onion powder, and cream of chicken soup. Stir until smooth and well combined.

  • Spread the mixture: Spread the chicken mixture evenly into the prepared 9×9 inch baking dish.

  • Prepare the topping: In a small bowl, combine the crushed Ritz crackers and melted butter. Stir until the crackers are fully coated in butter, then sprinkle the mixture over the chicken mixture in the baking dish.

  • Bake: Bake uncovered for 30 to 40 minutes, or until the casserole is hot and bubbly and the top is golden brown.

  • Serve and enjoy!

Notes

  • For a quicker prep, use rotisserie chicken.
  • Ensure the cream cheese is very soft to incorporate it smoothly into the casserole. If needed, microwave the cream cheese for 15-20 seconds to soften it.
  • This dish can be prepared up to step 3 and then refrigerated or frozen for later use.
  • If freezing, thaw completely before baking as directed above.
  • For a gluten-free version, use gluten-free Cream of Chicken Soup and substitute crushed pork rinds for the Ritz crackers.
  • Unsalted Cream of Chicken Soup is recommended to control the sodium content.
