Ingredients

For the Cake Layers:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt

For the Ice Cream Layers:

  • 1 pint vanilla ice cream
  • 1 pint strawberry ice cream
  • 1 pint mint chocolate chip ice cream
  • Food coloring (pink, blue, purple)

For the Whipped Cream:

  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

For Decoration:

  • Rainbow sprinkles
  • Edible glitter
  • Unicorn cake topper

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  • In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs, one at a time. Mix in vanilla extract.
  • In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture, alternating with milk. Mix until smooth.
  • Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  • Soften the ice cream slightly. Divide each pint of ice cream into separate bowls and tint with food coloring as desired.
  • Once the cake layers are completely cool, place one layer on a serving plate. Spread a layer of vanilla ice cream over the cake, followed by a layer of strawberry ice cream, and then a layer of mint chocolate chip ice cream. Place the second cake layer on top.
  • For the whipped cream, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread whipped cream over the top and sides of the cake.
  • Decorate with rainbow sprinkles, edible glitter, and a unicorn cake topper.

Notes

  • Ice Cream: Allow ice cream to soften for easier spreading, but don’t let it melt.
  • Decorating: For a fun twist, use multiple colors of whipped cream or more varied decorations.
  • Storage: Store any leftovers in the freezer, but keep in mind the whipped cream may lose some texture.
