For the Cake Layers:
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
For the Ice Cream Layers:
- 1 pint vanilla ice cream
- 1 pint strawberry ice cream
- 1 pint mint chocolate chip ice cream
- Food coloring (pink, blue, purple)
For the Whipped Cream:
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
For Decoration:
- Rainbow sprinkles
- Edible glitter
- Unicorn cake topper
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs, one at a time. Mix in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture, alternating with milk. Mix until smooth.
- Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
- Soften the ice cream slightly. Divide each pint of ice cream into separate bowls and tint with food coloring as desired.
- Once the cake layers are completely cool, place one layer on a serving plate. Spread a layer of vanilla ice cream over the cake, followed by a layer of strawberry ice cream, and then a layer of mint chocolate chip ice cream. Place the second cake layer on top.
- For the whipped cream, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread whipped cream over the top and sides of the cake.
- Decorate with rainbow sprinkles, edible glitter, and a unicorn cake topper.
Notes
- Ice Cream: Allow ice cream to soften for easier spreading, but don’t let it melt.
- Decorating: For a fun twist, use multiple colors of whipped cream or more varied decorations.
- Storage: Store any leftovers in the freezer, but keep in mind the whipped cream may lose some texture.
